Comte, 1 year old
Comte is a semi-hard, unpasteurized, name-controlled cheese produced in the franche-comte region of eastern france. Also known as a french gruyere, as it sometimes is referred to as gruyere de comte, it is the highest produced french aoc cheese. Sourced from milk in the summertime from the montbéliardes cows, this version is aged for at least 1 year, creating a rich and nutty flavor with an ivory color and a dark rind. This is one of our most popular french cheeses.
Montasio
The cheese we are most famous for! Montasio is an italian, name controlled cheese from the northeastern region of italy. Originally produced by benedictine monks in the 13th century, this mountain cheese has a dense texture and a nutty flavor. It is typically a table cheese but can also be used for grating with the more mature varieties.
Parmigiano Reggiano
Nicknamed the "king of cheeses" , parmigiano reggiano is a doc cheese named after the town of parma in the emilia-romagna region of italy. This partially skimmed unpasteurized cheese is the most popular cheese sold at todaro bros. And one of the most versatile cheeses in the world. The cheeses sold here are "straveccho", which are aged between 24 and 36 months. It is our opinion that these forms are the most flavorful well-balanced reggiano's. The texture is firm and grainy and its flavor is rich and nutty.
Pecorino Romano
Most famously known as a grating cheese, this name controlled sheep milk cheese comes from the provinces of lazio and sardinia. Made from pasteurized sheep milk and aged for at least 8 months, this cheese develops a very hard texture with a salty flavor. A classic ingredient for many italian pasta dishes, we sell this cheese as a whole chunk to ensure freshness and quality. Because of its salty taste, it is best served with sauces with big flavors, traditionally those from the roman region in italy. A must for all of your italian creations.

Prima Donna
Ponna is a pasteurized, cow's milk cheese made in the style of a dutch gouda aged for 14-16 months, the cheese is dipped in wax. As one of our medium aged gouda cheeses, it is semi-firm in texture. Considered to be one of the most popular cheeses in france, pont l'eveque is a name controlled, washed rind cheese. This square shaped cheese is one of the oldest in france. In the middle ages this cheese was referred as either "angelot" or "augelot". In the 16th century, it was then referred as pont l'eveque, the original town this cheese originated from. Made from pasteurized milk, the rind is slightly sticky and aromatic with a pale orange color. Its texture is rich and creamy with a full and robust flavor. Morbier
From the franch-comte region in france, morbier is one of our more recognized cheeses by its layer of ash spread through the center of the cheeses pate. Originally made for personal consumption by the cheese makers of comte, this developed by adding ash to the leftover curd of the evening production. The next morning, the leftover curd from that day's production was added, resulting in a layered cheese. This cheese is elastic and aromatic with a slightly sticky pate.
Mountain Gorgonzola
The most famous blue cheese from italy, gorgonzola is doc certified in the areas of piedmont and lombardy.
