atelier is where todd and jean philippe roast and sample coffees before they can become ingredients in one of our world class blends. each of these coffees possess characteristics representative of the region and, although not blends, are interesting in their own right. haiti - blue forest is currently being used in 2 new blends todd and jp are working on. notes: blue forest, an heirloom typica variety, is grown semi-wild in the mountains of haiti, a rare and historical coffee as it comes from an unaltered line traced back to the first plant cultivated outside of ethiopia. what's more, blue forest is the only haitian coffee in america, of specialty grade.
