Korma Style Gravy
Sumptuous, rich sauce, slow simmered with fresh crushed coriander, cumin, cloves, nutmeg, cardamom, cashew and melon seed paste, slowly incorporated with yogurt. Korma has its roots in the Mughlai cuisine[1] of the Indian subcontinent. A characteristic Mughal dish, it can be traced back to the 16th century and to the Mughal incursions into the region. Kormas were often prepared in the Mughal court kitchens, such as the famous white korma, perhaps garnished with vark, said to have been served to Shah Jahan and his guests at the inauguration of the Taj Mahal.[6] Classically, a korma is defined as a dish where meat or vegetables are braised with yogurt, cream or stock added.The technique covers many different styles of korma.The flavour of a korma is based on a mixture of spices, including ground coriander and cumin, combined with yogurt kept below curdling temperature and incorporated slowly and carefully with the meat juices.Traditionally, this would have been carried out in a pot set over a very low fire, with charcoal on the lid to provide all - round heat.A korma can be mildly spiced or fiery and may use lamb, goat meat, chicken or game;some kormas combine meat and vegetables such as spinach and turnip.The term Shahi(English: Royal), used for some kormas indicates its status as a prestige dish, rather than an everyday meal, and its association with the court.
Kadhaai Style
Tossed with ginger and garlic in a special heavy wok with whole spices, cubed onions, tomatoes and bell pepper. Karahi or Kadahi comes from prakrit word Kataha, mentioned in Ramayana, Sushruta Samhita. Karahi vessel is first mentioned in the Vedas as bharjanapatra. Karahi serve for the shallow or deep frying of meat, potatoes, sweets, and snacks such as samosa and fish and also for Indian papadums, but are most noted for the simmering of stews or posola, which are often named karahi dishes after the utensil.Stews prepared in a karahi include chicken karahi, mutton karahi (usually made with goat meat, reflecting South Asian usage of the word mutton) and dumba karahi (made with lamb meat) and also karahi paneer (a vegetarian version). Prepared in a reduced tomato and green-chilli base, a karahi is a popular late-night meal in Indian cuisine, popular in state of Punjab usually eaten with naan or Tandoori Roti.
Vindaloo Style Gravy
Chopped onions, tomatoes, palm vinegar cloves, fresh ginger, turmeric, paprika, cumin, coriander, cayenne pepper and hot peppers blended into a perfect paste and cooked in a heavy skillet. A standard element of Goan cuisine derived from the Portuguese carne de vinha d'alhos (literally "meat in garlic wine marinade"), a vindaloo is a dish of meat marinated in vinegar and garlic. The basic structure of the Portuguese dish was the Portuguese sailor's "preserved" raw ingredients, packed in wooden barrels of alternate layers of pork and garlic, and soaked in red wine. This was "Indianized" by the local Goan cooks with the substitution of palm vinegar for the red wine, and the addition of dried red chili peppers with additional spices. It evolved into the localized and easy-to-pronounce dish "vindaloo"

Process as starting from the basic ingredients of an Indian dish, namely chopped garlic, ginger, and green chilis and finishing off with chinese ingredients.
