This is exactly the question Juan de Dios Castillo (the family’s agronomist) and his 4 siblings were looking to answer when they created J&M Family Coffee, a privately-owned export company named after their parents Juan and Miriam. Their first goal was to sell their parents’ coffee directly to international buyers. It was a way to honor their parents who started cultivating coffee during their childhood with the income from the first family business as tailors in the town of Jinotega. With this first goal completed, Juan de Dios Castillo decided to take on a new challenge and start his own farm called El Pastoral, which has 150 acres of coffee production. Cherries from Finca Pastoral are selected for more specialized processing rather than the more common washed processing. This Natural processed lot is a stunning example of the skill and commitment Juan de Dios has invested in the family business. During the harvest, the coffee cherries are carefully harvested and transported to the dry-mill where the weather conditions are more stable for evenly drying coffee inside the cherry. After drying is completed, the coffee is stored and later prepared for export at the same dry-mill. This is a truly integrated model, in which J&M Family Coffee ensures quality control and traceability from farm to export.

A velvety smooth coffee from the town of Peñas Negras in Oaxaca. It is incredibly sweet with a touch of strawberry acidity in the front. After the acidity fades, the rest of the cup is sweet with notes of chocolate and caramel. The long, sweet chocolate finish is smooth and velvety on the palate. This is a coffee that you can drink all day long! Roast Color: Medium-Dark Cupping Notes: Chocolate, Caramel, Strawberry Story: Imagine starting at sea level in the popular Mexican beach destination of Puerto Escondido and traveling along progressively steeper and curvier roads through villages, where the local population still wear traditional indigenous clothing, eventually arriving at a lush forest intercropped with coffee, bananas, corn, beans, fruit trees, and views of the Pacific Ocean in the distance below. This is the Oaxacan coffee growing region known as the zona Pluma where the Sierra Madre del Sur coastal mountain range is peppered with small coffee farms. This particular lot comes from 15 families living near the town of Peñas Negras that cultivate coffee on farms with just a few acres. Each producer harvests and carefully sorts cherries and then depulps, ferments, washes, and dries the coffee using their own micro-mill. They deliver their dried parchment to the family owned export company in Oaxaca called Galguera Gomez, which specializes in preparing traceable Oaxacan lots and paying producers higher incomes for the quality of their coffee.

Our July coffee is from the Kimel estate in Papua New Guinea. This coffee has a medium body, medium roast and fairly low acidity. The cup starts very mild with a touch of strawberry acidity. As it develops on the palate, notes of rhubarb pie begin to flourish on the roof of the mouth. The rhubarb combines with notes of wafer cookies in the long, dry finish.

This coffee is a natural processed coffee from the Santa Leticia farm in El Salvador. This coffee is spicy and sweet with a medium body and low acidity. The first thing to hit your palate when you taste this coffee is the spices. Cinnamon highlights the spiciness that reminded us of a garam masala spice blend. The sweetness of caramelized sugar pops in the middle of the cup and it finishes with a long, dry cocoa powder finish. Our May coffee of the month is a natural processed coffee from Rwanda. This coffee is bold and rich with a medium body and mild acidity. Notes of smoke and vanilla hit your palate right at the beginning of the cup and are present throughout. In the middle of the cup, tropical fruit acidity and notes of cedar make a brief appearance and then give way to the long vanilla-bourbon finish. We 39;ve had some mild, balanced coffees over the past couple months and this one is certainly unique.There were a lot of & quot;wow & quot;and & quot;woah & quot;comments from our team as we started cupping it.We are loving how different this coffee is! Roast Color: Medium - Dark Cupping Notes: Bourbon, Cedar, Tropical Fruit Story: The Nyamasheke district in Rwanda is gifted in terroir.The cool, humid climates of both Lake Kivu and the Nyungwe Forest National Park keep groundwater abundant throughout the uniquely hilly region.Kivu itself is part of the East African Rift whose consistent drift creates volcanic seepage from the lake’ s bottom and enriches the surrounding soils.Coffees from this region are often jammier and heavier than in the rest of the country. Ngoma Coffee Washing Station is located in the southern part of Nyamasheke district, in a striking location right on the shore of Lake Kivu.The station is owned and operated by Baho Coffee Company, a small community - focused processing and exporting group that currently operates 6 washing stations in 6 different districts in Rwanda, and is currently constructing 2 more.Baho produces excellent quality naturals and experiments annually with honey processing and anaerobic fermentation styles.Participating farmers delivering cherry to Baho’ s washing stations can count on annual payment premiums as well as farm - level support, including annual coffee seedlings, health insurance, fertilizer, and harvest loans.Producer groups like Baho cherish their farmers’ potential and are learning to maximize the quality and variety available from Rwanda’ s most promising terroirs.

Washed Timor from the CCT cooperative in East Timor. This coffee has two distinct personalities depending on the temperature. When it is piping hot, it is bold and earthy in the front and has some sweetness in the finish. As this coffee cools a bit, the earthy notes mellow out significantly and it becomes nutty with much more sweetness. Our team pointed out notes of hazelnut, chocolate, oat milk, and maple syrup as the cup began to cool. Roast Color: Medium-Dark Cupping Notes: Cherry, Spice, Brown Sugar Story: Benilde Lopez produced this micro - lot on a 22 - acre farm called Los Cedros located in the department of Lempira, Honduras.Benilde uses his own micro - mill to process harvested cherries, which allows for meticulous care in depulping, fermenting, and drying the coffee.Benilde collaborates with an export company called BICAFE, which operates a warehouse and dry - mill in Santa Rosa de Copan.Weather conditions in Santa Rosa are ideal for storing parchment and the dry - mill is specifically designed for sorting micro - lots.The partnership has helped to improve quality, increase earnings from coffee sales, and strengthen the family’ s livelihood.

It starts with subtle notes of sweet citrus in the front, then prominent notes of shortbread develop in the middle of the cup. The finish is long and chocolatey with a hint of raspberry. This mild and flavorful coffee is the kind that you can drink all day long! Roast Color: Medium - Dark Cupping Notes: Shortbread, Chocolate, Fruit Story: This coffee is a blend of various small family farms from the Pichincha and Imbabura provinces, 150 hectares in total, sourced and curated by Galo Flores and Maria Alexandra Rivera.“Chirimoya†is the title for the small - farm blend, in honor of the native and uniquely delicious fruit widely grown and consumed across the Andes.Principal harvest months in Pichincha and Imbabura are June to September, but farms often continue picking through December.Ecuador’ s namesake position on the Earth’ s equator means that medium - altitude coffee enjoys practically a perfect year - round growing season, often with flowering and ripe cherry sharing the same branch most months.In addition to coffee it is common for farms in this area to grow any combination of potatoes, plantains, corn, sugar cane, cacao, soursop and chirimoya, and heart of palm. Our March coffee of the Month is a unique coffee from the Kamajumba estate in Rwanda. It is a well balanced coffee with subtle acidity and a nice, round body. It starts with a subtle sweet orange acidity, which is then overtaken by bold bread and smoke notes that pop on the palate. The smoke notes carry through to the finish and meld with molasses and dark chocolate flavors for a long lasting finish. This coffee is bold when freshly brewed and, as it cools, it develops a lovely sweetness through the cup. Roast Color: Medium - Dark Cupping Notes: Brioche, Smoked Wood, Molasses Story: This Rwandan coffee comes from Kamajumba, one of three estates owned and operated by Kivubelt in the Nyamasheke region.Kamajumba is a 22 - acre estate planted entirely on a narrow peninsula in Rwanda’ s famous Lake Kivu.Kivubelt was established in 2011 by Furaha Umwizey.Umwizey’ s goal with Kivubelt is to create a model coffee plantation, as sustainable in agriculture as it is impactful in local employment and empowerment.Under Umwizey’ s leadership, Kivubelt has planted 90, 000 coffee trees on their estates, which now employ more than 400 people during harvest months and is a kind of coffee vocational school for local smallholders interested in improving their farming. Rwanda’ s coffee crops roared to international buyer attention in the late 2000’ s thanks to one of East Africa’ s most successful coffee interventions, the Partnership for Enhancing Agriculture in Rwanda Through Linkages(PEARL).PEARL was a sweeping infrastructure and education investment targeting large regions of Rwanda whose coffee was for the most part processed poorly at home and exported with little traceability.The program, designed and led by the University of Michigan, Texas A & amp;M and a host of Rwandan organizations, vastly increased processing hygiene by building washing stations.It also organized remote and under - resourced smallholders into cooperative businesses capable of specialty partnerships.

Our November coffee of the month is a well-balanced and smooth coffee from the island of Java. This coffee is very soft and subtle up front, and it it's not 'til the middle that the flavor pops. Herbal and sweet caramel notes create a wonderful balance of flavor on your tongue. It then finishes with a long toasty finish with some lingering caramel sweetness. This Java is rich with very little acidity until it starts to cool, then subtle notes of grape wake up and do a little dance on your tongue toward the finish. Roast Color: Medium - Dark Cupping Notes: Herbal, Caramel, Toast Story: In the late 1600 s and early 1700 s the Dutch introduced coffee to Indonesia.At the time, Indonesia was a Dutch colony and the island of Java was the location of the capital of Indonesia.Indonesia became a huge producer of coffee and was the first place, outside of Arabia and Ethiopia, where coffee was grown on a large scale.It is unclear how & quot;Java & quot;became a nickname for coffee, but one story says that bags exported by the Dutch East India Company were marked & quot;Java & quot;when they were imported back to Europe.Whether true or legend, this production on the island of Java back in the 18 th Century was significant enough(and the name was catchy enough) to lend it & #39;s name to our favorite beverage. Our Java is sourced from the Blawan Estate. The Blawan Estate is one of the biggest estates on the island of Java. It is owned and operated by the Indonesian government. Unlike most of the other Indonesian Islands, the process on Java is fully washed, which gives the coffee a cleaner, more balanced profile.

Medium/Dark Roast. Well-balanced and mild cup that typifies great Costa Rican coffee. The nuttiness of pecan and walnut are the first flavors that touch your tongue. You then get a very subtle hint of tropical fruit acidity as the milk chocolate begins to flourish on your palate. The finish is long prominent milk chocolate sweetness and a touch of sweet caramel. STORY: There is nowhere like Costa Rica when it comes to coffee cooperatives and CoopeDota, which was established in 1960, is one of the finest. It starts with an unmatched commitment to the environment. CoopeDota has a first of its kind certified carbon-neutral mill, which features hydro-powered energy consumption, water efficient eco-pulpers, and mechanical coffee dryers fueled by coffee parchment. Nearly 900 producer-members living throughout the canton of Dota within the province of San Jose, Costa Rica focus their attention on farm management throughout the year and then deliver their cherry to the CoopeDota mill where traceability and quality control are second to none. CoopeDota has an equally intricate model of income diversification with a profitable agriculture supply store and tourism department dedicated to showing off coffee farms to visitors. They also roast their own coffee and operate three cafes and a cupper/barista training center. Their commitment to the environment also extends to the community of Santa Maria de Dota where the cooperative manages trash pickup for the entire town.

Our July Coffee of the Month is a more savory sensory experience than our last few spotlighted coffees. Your journey starts with a sweet caramel aroma, and in your first sip, you will find that it is spice forward with notes of bourbon smoke that carry through from start to finish. The subtle notes of lemon in the middle of the cup add a touch of acidity on the tongue, and the long finish is highlighted by the sweetness of chocolate and savory notes of smoke that reminded one of our cuppers of perfectly crisp bacon. Roast Color: Medium-Dark Cupping Notes: Smoke, Cocoa Powder, Lemon Story: Mexico Chiapas Bella Vista Mayan Harvest is sourced from 38 family-owned farms located within the municipality of Bella Vista in the state of Chiapas, Mexico. Rosalba Cifuentes Tovia, who was raised in the Bella Vista coffee community, has dedicated herself to helping producers with small plots of land (averaging 5 acres) earn a better price for their coffee. Rosalba ensures traceability for her community coffee by personally exporting the coffee directly to the Bay Area. Rosalba also concerns herself with the small details like being sure to pull samples without piercing the producers bags, which has eliminated the cost for replacing damaged bags. These efforts allow producers to earn higher prices and reinvest in better agricultural practices and improve the livelihoods for their families.
Sumatra Kerinci (June Coffee of the Month)

Dark Viennese Roast (Medium/Dark). Caramelized Sugar, Toasted Coconut and Citrus notes. This Sumatra is much sweeter than the typical earthy, herbal Sumatran coffees. It is rich and balanced with a prominent caramelized sugar flavor. It is sweet in the finish with hints of toasted coconut. As the cup cools, it develops a little more acidity in the front and has subtle notes of tangerine. This lot comes from the Barokah Cooperative, which has 140 members who cultivate on small family owned plots of land located around Mount Kerinci, the highest volcano in Indonesia. The cooperative works closely with producers to decrease forest encroachment. Their farm management practices create a protective buffer for the Kerinci Seblat National Park, which encircles the entire Kerinci valley with unparalleled natural beauty and habitat for the Sumatran Tiger. During the harvest, producers deliver their cherry to the Barokah mill where it is sorted, depulped, fermented, washed and gently dried on raised beds. The dried parchment is delivered to Yudi Putra, which takes great care in managing traceability and preparation for export.

Our December Coffee Of The Month is a complex medium roast from the Edelweiss estate in Tanzania. This coffee has a medium acidity that pops at the beginning of the cup with notes of cherry and raspberry. As the acidity fades, it becomes sweeter with dried cherry flavors melding with chocolate and truffle notes. The finish is rich and sweet with a light creaminess, that reminded us of whipped cream or mallow. Roast Color: Medium Cupping Notes: Dried Cherry, Chocolate, Whipped Cream Story: This coffee is sourced from a family owned estate located in Oldeani, Tanzania. The 600 acre estate, called Edelweiss, is perched on the slopes of the Ngorogoro Caldera (the largest unbroken caldera in the world), a protected wildlife refuge for the endangered black rhino and UNESCO World Heritage site. The estate has been in the Vohora family since the end of World War II. In recent years the Vohora family has made significant farm renovation including intercropping macadamia trees for shade and income diversity. Mill innovations have also vastly improved water management and quality control from picking to export. More than 50 full time employees have access to housing and land to grow food crops for their families.
