Kibiru AB

Flavors of berry, peach and caramel. Kibiru is a washing station in the area of central Kenya known as thika and is part of the award-winning gitwe society cooperative. This is only kibiru’s second harvest season. While most washing stations in Kenya are operating with decades-old equipment, kibiru was opened as a brand new facility 2016 by gitwe society after their karatu station won a good food award. We feel like we have found a great partner in kibiru. They are still very small and boutique in their operation and practices, receiving and processing coffee from only about 80 individual farmers. This year we purchased their aa, ab and peaberry coffees. Kibiru’s high altitude and acidic soil help to generate a sweeter and more vibrant coffee in the cup. This is a selection of kibiru's ab grade coffee a medium bean size in Kenya grading system.
Little Buddy

Little buddy is a blend for those seeking an adventurous, complex fruit laden cup balanced perfectly by comfortable chocolaty flavor notes. Little buddy was the name of a teenager's first car. This blend of coffees, just like the car little buddy, takes an inexperienced palate and guides it towards a new world, transported by a vehicle that is fun and exciting to roll with. Little buddy is our espresso blend for our proctor-tacoma location. The spirit of the city of destiny is captured in every sip.
San Sebastian Reserva

Flavors of milk chocolate, apple and sugar cane. Our san sebastian reserva combines lots we selected from hundreds cupped--from producers in san sebastian de la plata, huila. These producers farm at elevations above 1, 700 meters on three hillsides surrounding the community of la plata. After manual de-pulping, their coffee beans are fermented in tanks for up to 24 hours before being washed and laid to sun dry on parabolic beds. The creation of the san sebastian reserva project is intended to develop lasting, quality-focused relationships between farmer and roaster. In order to ensure that we are working in tandem with our growers, the project incorporates a staff cupper in Colombia who works with both farmer and roaster; hundreds of samples of coffees fresh from harvest sent to olympia coffee to be cupped every week throughout the 2 growing seasons in la plata; and multiple farm visits from the staff of olympia coffee.

Coffee is a seasonal fresh produce and different producing countries have varied seasons and harvest periods. We strive to buy smaller lots in their prime to keep the blend as fresh as possible. The ingredients of the blend change based upon seasonality, yet the flavor profile for big truck remains the same.

Decaf Asterisk

Flavors of milk chocolate, caramel and marshmallow. Decaf is for coffee lovers. We work tirelessly to create the best decaf program in the world. For this version of asterisk we teamed up with our producers from Colombia's san sebastian project and partnered with colombian decaf plant, la serenia, where they used raw sugar converted to ethyl acetate to extract the caffeine from the coffee. San sebastian coffees are part of the most complex coffee project we have undertaken, a project intended to develop lasting, quality-focused relationships between farmer and roaster. In order to ensure that we are working in tandem with our growers, the project incorporates a staff cupper in Colombia who works with both farmer and roaster. Hundreds of coffee samples, fresh from harvest, are sent to olympia coffee to be cupped every week throughout the 2 growing seasons in la plata and multiple farm visits are made each year from the staff of olympia coffee. Banko

Flavors of cherry, citrus zest and lavender. Banko dhadhato farmers have been working with olympia coffee since their first year as a cooperative. Their coffee is one of our most sought-after single-origin offerings every year. And this year, the cooperative we've grown to love produced and this amazing micro lot # two in the last week of december 2018. It was pulped within hours of harvesting, fermented for over 30 hours underwater, and finally, rinsed, and then dried on raised beds. The washed process brings out subtle flavors on banko's beloved coffee.
Holiday Blend

This year's holiday blend is sure to be a classic. We have taken two of our most popular and delicious single-origin coffees, Colombia san sebastian reserva and Ethiopia jibicho natural and blended them 50/50. These coffees, from opposite sides of the world, are also far apart in flavor. Yet, despite their differences, when they are blended together they create something unique and special that represents our favorite flavors of the season. In this blend, san sebastian reserva brings flavors of chocolate, caramel, and sweetness, while Ethiopia jibicho natural takes over the show with bold berry flavors, and spice notes, akin to clove. These flavors make it the perfect gift this season. Like all of our coffees, holiday blend meets our fair for all sourcing standards, where we seek to improve quality of life at every step of this coffee's production. Lucas Melo Reserve

Flavor of berry, chocolate and chamomile. When you visit lucas melo’s farm, el cairo, you start to understand how one coffee can taste so perfect. Waterfalls, butterflies, birdsongs, and the scent of flowers fill your senses and soul. This is the place. This is where it starts. El cairo is one of the highest elevation coffee farms in the world, at 2, 300 meters above sea level. Perched on the galeras volcano in narino, Colombia, lucas’ farm is one of the most remote in the area. As a third-generation coffee farmer, he knew when he bought his farm a decade ago the level of hard work and dedication that would be required to grow the best coffee in the world; today, lucas is one of a handful of coffee farmers that have pre-sold their entire harvest - even before cherries develop on the trees. Winning the cup of excellence three years straight is proof that lucas melo knows what he is doing. Even with his global recognition, lucas still does most of the work at the farm himself and he pays his staff double the local rate to ensure that only perfectly ripe cherries are selected off the trees. To be honest, lucas’ coffee is expensive for olympia coffee as we compete with roasters 100 times larger than us to be able to buy his coffee and we pay a lofty price for it in the end. However, we know it is worth every penny. This is just one of those coffees that you would be perfectly happy to drink for the rest of your life. Just perfect.
Jibicho Natural

Flavors of strawberry, cocoa and blackberry. Bedhatu jibicho is a single farmer from the village of banko gotiti, gedeb, Ethiopia. We first met her in 2014 when she and her neighbors joined together to form the banko gotiti cooperative. Over the last four years we have been working with the banko cooperative extensively and getting to know bedhatu jibicho’s coffees really well, as she is the largest single producer within the cooperative. As olympia coffee has been pushing forward to source coffees that truly have the most impact in improving farmers' lives, our goal moved toward sourcing from individual producers rather than large cooperatives. Working with our sourcing partners in Ethiopia, royal coffee, we incentivized certain producers to leave their cooperatives and obtain their own export license. In doing so, these farmers are able to retain 30% more of their margin, which previously went to the cooperative. We have the rare opportunity to drink a single producer's coffee, which in Ethiopia is almost unheard of and have the impact of improving the lives of farmers and their families.
Kamviu AA

Flavors of plum, tea, hibiscus. 120 farmers contributed to this micro-lot from the kamviu factory within the gakundu cooperative in embu county Kenya. Each of these farmers had to focus on picking only ripe coffee cherries and delivering it to the kamviu within hours of harvesting. Most of these farmers walked over two kilometers in the late afternoon on 22 december 2018 to deliver coffee cherries. Once arriving at the kamviu factory the cooperative staff members helped farmers sort out any under-ripe cherry, while the ripe cherries were pulped using water, and a mckinnon three disc pulper, stripping the seed from the cherry pulp. Pulped coffee is then fermented in tanks for 24 hours. After fermentation, the coffee is washed in channels and sorted again by density. Only the heaviest, densest coffee remains in this high-quality lot. Next, another fermentation takes place removing any fruit still clinging to the bean. The coffee then moves to raised drying beds where this lot was dried in the sun with almost constant rotation to ensure slow, even drying for 15 days. After the coffee is dried to 10% moisture content it is cured in bins for two months. Once the curing process is complete the lot is moved to the dry mill where the green bean was peeled out of its parchment skin. While the milling happens, there is yet another sorting process, this time for bean size. All of this work yields only the largest bean size, over 17 mm in size each, which is graded aa - the highest quality grade from Kenya.
El Socorro Maracaturra

The maracaturra varietal grown ther is one of the rare varietals whose inherent flavors dominate any flavor of terroir. In the past decade el socorro has dominated other guatemalan coffees in the cup of excellence, placing consistently in the top five. El socorro continues to be one of our favorites, a coffee of transparent beauty.
Sweetheart Yirgacheffe Reserve

Flavors of peach, candied citrus and rose. This sweetheart is a collection of coffees from the famed yirgacheffe area of Ethiopia. We work in the surrounding towns, from wenago all the way down to banko gotiti and in this collection we have included only washed coffees from these areas. These coffees are world renown for their floral quality and elegance. Ethiopia, being the birthplace of coffee, is also known for an exclusive heirloom collection of varietals. These varietals bring forward flavors of stone fruit and candied citrus. Ethiopia yirgacheffee reserve is made up of two producer we have been working with for a few years, including coffees from the banko dadhato cooperative and single producer desta gola.
