Dubbed the “Royal Pastry” as it rises like a crown during its flash-frying process. This is the one bread to rule them all. Bake is a Guyanese semi sweet handheld puff bread. Made of just flour, water, sugar, baking powder and love and flash-fried to puffy perfection. And when its golden tender outer edge is pierced, it reveals a luscious steamy doughy center. This is possibly the best version of Bake on Planet Earth and one of the best breads of Portland in general. My mother’s special recipe which is made daily for your edible enjoyment. We traditionally eat Bake most often on Sunday mornings within families but it's now available almost everyday. There are no words to truly describe the unique texture and flavor of this bread. This is my favorite of our offerings and our masterpiece version of the very standard, simple, Indian dish. I try not to like our food as I was raised on it but this is still my favorite out of the 100+ variations I’ve tried across four continents, as it’s so clean and simple, so masterfully eloquently done. Guyanese curry is married to a sautéed tomato base and hit with some garlic salt, a little bit more salt, onions, some black pepper, love, and water to mix it all up. Really tender chicken and potato is marinated overnight in it. It’s utterly amazing, like an artist drawing a circle perfectly freehand. Our most popular meat entree. Gluten-free.

Guyanese Award Winning Noodles. Guyana is Amerindian for, “Land of Many Waters.” There are over 60 rivers that flow through Guyana. The largest is the Essequibo River at 630+- miles and then they scale down in size from there but along their travels, some of them pick up sediments and go from clear to the color of Coca Cola. It’s sweet and safe to drink if you’re from there, it’s called “Sweet Whata.” It evaporates and turns into clouds and crushes on the lands daily. Due to this and numerous other factors specific to the region like mass sugar plantation runoff, everything in Guyana grows just slightly sweeter. So we take these slightly sweetened noodles and marinate them overnight in a teriyaki/soy compound.
