If you ever partook in a pint at our bar before Covid times, you likely engaged in a conversation with Jason Trzeciak. He was one of those gentle beings that could instantly find something to talk about with anyone he came upon. He was a huge supporter of our brewery and of the local beer community as a whole. We lost Jay way too soon and when we learned of the sad news on 11/11 we knew instantly that we had to make a hop bomb of an IPA in his honor. Baard Tovenaar 2020 (5.5% ABV/11 IBUs): Belgian sour ales seem to come from magic, almost like a Bearded Wizard poured a lot of different brews into one cauldron and then stored them in oak barrels for 18 months. Well, that is what we did with this Flemish Red ale similar to our Drie Hoofden. Starting with our Cascara Sour we added a few younger beers like the Prickly Pear and let the Brettanomyces, Lactobacillus and Roeselare go to work. Cascara is perfectly balanced on a slightly tart malt base with real sour cherry plus the Prickly Pear sweetness adds complex strawberry flavor with a hint of Sour Patch sweetness.
