We serve sapporo style ramen. Our noodles are custom made for us in sapporo, japan. The stock that we use is called chintan. It's characterized by its clear appearance and delicate, yet complex flavor. The chin tan stock contains chicken, beef, and pork. All ramen except the vegetable is topped with garlic, onions, bean sprouts, ground pork, chashu (roasted pork shoulder), nori, and scallions choose from small or large. Small is best with a few kozara dishes, but large is also great with kozara dishes as well.
Shio

This ramen shows off the delicate and complex chintan stock the best. Our shio has a hint of seafood flavor.
Shoyu

Our shoyu is a taste of the classic showa period: the first golden age of ramen. The complex stock is brightened by fresh soy sauce flavor. Topped with half egg.
Spicy Shoyu

To make a spicy ramen with a shoyu (soy sauce) base was a bit tricky. Unlike miso, the aromatic quality of shoyu is a bit more delicate and fragile. We were very careful in finding the right Spiciness that balanced well with the quality of shoyu.

We use a lighter, gentler miso with sesame seeds to match our stock.
Vegetable

100 lb. vegetarian. A mix of vegetable stock and miso as the soup base. It's slightly spicy and very rich in flavor. Toppings include corn, hominy drained, fresh woodier mushrooms, romaine, onion, garlic, bean sprouts, corn sprouts.(contains peanuts)
