Alone it has notes of dark chocolate a viscous body and a lingering finish but there is nice acidity and complexity to shine through milk. The Las Lajas farm is famous for its high quality, honey processed coffees. The "yellow honey" process used on this coffee means 100% of the mucilage of the fruit was left on the bean as it dried on raised beds in the Costa Rica sunshine. The coffee is monitored and turned hourly to create a coffee that is both sweet and clean. Las Lajas fully processes the bean at the farm level to increase the traceability and quality of the coffee.
